Starting to feel all the fall vibes lately. I baked these sweet nd savory chocolate cranberry gluten free scones and they tasted so good! The perfect scone and so easy to bake. The rainy weather this weekend has me feeling like cuddling on the couch with a coffee and a scone. You guys know that I have been juggling more than I ever have and you know what is crazy. I am loving it. I am a busy mom and take care of a lot while still trying to include some self-care. What you may not know…is that I am gluten free and eat clean and organic. I struggled for a long time feeling really sick and finally discovered I was celiac about 10 years ago. So here I am now a pro at this GF thing. My husband is also gluten free because it just makes him feel better, so there’s definitely something to be said about that! Guys, he even gave up beer… OK!
I made these gluten-free chocolate cranberry scones and my inbox was flooded with requests for the recipe. Whether you are a good baker or not (I am not) you can make this super easy so delicious chocolate cranberry gluten-free scones.
There is no shame in my game, I use baking mixes from a box. I am just going to own it right here and right now, I will never be a from scratch baker. I do however cook from scratch all the time. I usually look at a few recipes see what flavor combos go together and then make it my own. I learned SO much from working at what feels like a hundred restaurants since I was 15. I definitely have a passion for food, I study a dinner menu every time we go out. I read the descriptions, educate Kevin and make mental notes about flavors that go well together.
All right, I am hungry now… So lets talk about this chocolate cranberry gluten free scone I am loving. Scones are easy because they don’t involve muffin papers, muffin tins etc. So keep that in mind, a scone is easier than a muffin… sold? of course you are!
Here’s the recipe!
Preheat oven to 400°F. Lightly grease cookie sheet or line with parchment paper.
In a large bowl cut in butter with pastry cutter or forks until it resembles coarse crumbs.
Whisk together 2 eggs and 1/3 cup milk in a separate bowl (or do what I did and dump it all in one bowl.)
Stir wet ingredients into dry until just combined.
I chopped up a Hershey bar and grabbed a handful of dried cranberries and tossed that into the mix.
Wet your hands so the dough doesn’t stick to them. plop the dough in the middle of a greased pan or use parchment paper and you won’t need to wash your pan! Form the dough into about as 2-inch thick circle in the middle of your sheet pan.
Grab a pizza cutter or large knife.
Run your knife under water as often as needed so it doesn’t stick to dough.
Cut like you would a pizza, you are just making score marks straight thru to the pan.
Bake 12-15 minutes until golden brown
Gently cut through the score marks that you made and allow scones to cool.
Store in an airtight container.
Enjoy with a hot cup of coffee and some peace and quiet before your kiddos wake up.
